Ruby Coffee Roasters brings us something exceptional from Finca El Diviso: a Pink Bourbon lot from Jose Uribe Lasso and his sons that showcases both a distinctive varietal and meticulous experimental processing. Grown at elevation in Bruselas, Huila—one of Colombia's most respected coffee regions—this lot represents nearly three decades of family dedication and modern innovation in specialty coffee.

Pink Bourbon has earned its reputation for remarkable flavor complexity, and the Lasso family's multi-stage fermentation protocol takes these varietal characteristics even further. The result is a coffee that unfolds in layers: bright pomegranate and fresh strawberry notes give way to the rich sweetness of crème brûlée, all lifted by delicate orange blossom aromatics. It's a coffee that rewards attention, revealing new dimensions with each sip.

Tasting Notes

Expect vibrant fruit-forward acidity reminiscent of pomegranate and ripe strawberry, balanced by a creamy body that evokes crème brûlée. Floral orange blossom notes emerge in the aroma and linger in the finish. The medium-light roast preserves the coffee's brightness while allowing the structured sweetness developed through fermentation to shine. The mouthfeel is silky and substantial, with a clean, lingering finish that invites the next sip.

Brew Methods

This Pink Bourbon excels as pour over—V60 or Chemex will highlight its floral aromatics and fruit brightness. Try a medium grind with water just off boil (200-205°F) to preserve the delicate top notes. It also performs beautifully as a longer espresso shot, where the crème brûlée sweetness becomes more pronounced and the body gains weight. French press at a coarser grind brings forward the chocolate undertones from the open-air fermentation stage. Avoid overly aggressive brewing that might emphasize acidity at the expense of balance.

About Ruby Coffee Roasters

Portland-based Ruby Coffee Roasters has cultivated a direct relationship with the Lasso family since 2019, starting with cooperative purchases and evolving into sourcing these innovative single-farmer lots. Their commitment to highlighting exceptional processing and varietal expression aligns perfectly with El Diviso's experimental approach.

Our team at Clive can recommend grinder settings and brewing equipment that will help you extract the full complexity of this remarkable coffee. Whether you're dialing in espresso or refining your pour over technique, we're here to help you get the most from every bag.
